Chervil is the feathery-leafy top of a wild annual plant. The leaves possess flavors of anise, celery, and parsley with a hint of mint. Chervil is a finishing herb as cooking it causes it to lose its flavor and intensity (of which there is a limited amount of). Add it at the end of cooking to soups, grilled lamb, breads, or pasta dishes. Cold, chervil is fantastic added to salads straight up or infused in a homemade champagne vinaigrette.
