Also known as Lal Chori Dal, Adzuki beans are small red beans that are nutritious and easy to prepare. Their firm texture and rich, nutty flavor make them perfect for use in savory dishes such as salads, soups, chilis, and vegetarian burgers. They can also be used in dessert applications - just boil with sugar or honey and mash to make anko, a Japanese red bean paste used in ice creams, buns, and cakes. To cook on the stovetop: Sort and rise 1 cup beans. Place in pot with 3 cups water. Cover and bring to a boil. Reduce heat to medium-low and cook until beans are tender, about 1 hour. Add more water as needed while cooking to keep beans covered. Makes 4 servings (about 3 cups).
