*Produced using organic green tea and organic honey
*Scoby packaging may be swollen or seems like it has been filled with air, this is from the fermentation process and is normal.
*Expect your SCOBY to have a slight vinegar smell.
*Your culture may contain globs or strands that appear to be brown or translucent and this is a normal growth during the fermentation process.
*These are growing particles of the yeast and bacteria and do not need to be filtered or removed.
Helpful brewing tips:
For a successful brew always use a ratio of 12 ounces minimum of starter tea per gallon. Adjust your ratio based on the amount of starter tea that you have
*For optimal conditions, keep out of direct sunlight, cover brewing vessel or storage container with a tight weave cloth to allow the culture to breathe but prevent contamination by insects or spores in the air
*Do not use cheesecloth as your top cover- fruit flies will infiltrate your kombucha. Instead use 100% cotton cloth cover, coffee filter, or a tightly woven breathable cloth.
*It is very important that your Jun has access to air while it ferments. Your brewing vessel needs a wide top opening. If your hand can fit inside our jar with ease your jar should work well for fermenting Jun.
