THIS IS NOT SWEDISH PEARL SUGAR WHICH LOOKS LIKE PRETZEL SALT. This is authentic imported Belgian pearl sugar for use in making Liege waffles. It's made from beet sugar instead of cane so it melts and caramelizes slightly faster than cane. It's what makes Liege waffles so special. We use this sugar (except in a slightly larger size) for our commercial wholesale frozen Liege waffle dough.
Couplet and Tirlemont are the 2 primary manufacturers of this sugar in Belgium. In terms of pearl sugar production, Couplet is #1 at approximately 24000MT per year while Tirlemont is #2 at approximately 8000MT per year. Our sugar is from Couplet which we think is better than Tirlemont because the pearls are slightly harder holding its shape better (giving a better balance of melted and unmelted pearls in the finished waffle) and is less sticky (for easier waffle iron cleaning). If you buy from someone else, ask them if their sugar comes from Couplet or Tirlemont because the most well known online seller resells Tirlemont. There's a reason why it's the #1 selling pearl sugar and you should use it as well.
The C40 pearls are 6-9.5mm in diameter and the perfect size for the home chef or small business operator who makes small batches. C40 is the most commonly used size for making Liege waffes. If you see a pearl size designation of P4 or 4-8mm, then it is from Tirlemont. This 4lb bag will make approximately 75 waffles.
