- LOCATION - Black Gum Tupelo trees bloom in May to June each year in the swamps of North Florida two weeks before the Holly. The delicate nectar rich flowers come on strong and fast and the bees quickly fill up their hives with this amazing nectar creating this rare sought after honey. Sometimes the bees visit Holly trees as they are filling their hives so we call this the Black Gum Tupelo Holly blend. It takes over 3,000,000 flowers for 1 lb. of honey! Thats a lot of Tupelo & Holly flowers.
- BENEFITS - This honey is low in glucose. Glucose is what turns into a solid sugar when honey crystallizes. So this honey is very slow to crystallize. Some say this low glucose/fructose ratio is good for diabetics, but we're not sure if any sugar is good for diabetes. But we sure do get asked the question a lot so that's the scoop, its low in glucose compared to other honeys. Its also loaded with antioxidant and antimicrobial properties.
- TASTE - Light and delicate. Very thick and low in moisture. Complex finish slightly more robust than white blossom tupelo. A favorite at the markets during taste testing. RAW - Raw honey is important to preserve the nutrients and enzymes in the honey and its important to leave all the good stuff in the honey to obtain the benefits of this amazing honey. Raw honey is great in tea. This is not Orange flavored honey the orange taste comes right from the flower the bees use for nectar.
