Why Stainless Steel?
Carbon-Steel is heavier than stainless steel, which makes it difficult to hold for long periods. Other metals used in blades can rust easily and you will need to use a sharpener often.
Stainless steel is completely rust free, and is the lightest material available that also remains razor sharp after use.
Why TPR?
Aluminium and titanium handles are prone to getting scratched. Carbon fiber is not only expensive, it's brittle. Bone handles, whilst looking beautiful, are slippery and unsafe to use, and are susceptible to cracking.
And wooden handles, such as birchwood, whilst also being beautiful, are porous, and therefore pick up stains, odors and need regular oiling.
Thermoplastic Rubber is the best choice as it cannot be scratched or broken, is non-slip, even when using with wet hands, and is stain and odor resistant.
