Raw pu erh tea, also described as pu-erh, puer or puerh, is a fermented and aged dark tea produced in the mountains of Yunnan, China. During production the tea leaves undergo microbial fermentation and oxidation after they are dried and rolled. This special process is different from common, western "black tea". Puerh from Yunnan Province is the best known variety of this category of tea, wit production dating back to imperial China.
Coastal Tea Pu'erh
This specific pu erh loose leaf tea undergoes an accelerated fermentation know as "ripe" or "shu". This rapid fermentation is then slowed and aged to produce a rich, unique taste with notes of dark chocolate and dried Chinese dates.
