This is a very unusual honey, made not from nectar, but from droplets of sap that the bees collect from leaves (those droplets are deposited by aphids). They turn it into honey, but it is not as sweet as regular honey, in fact, it contains a lot of minerals, and some years, it tastes almost salty. It is dark because of the minerals and amino acids it contains, which some people believe to be excellent for the health. This year, the melata came from citrus trees after they were done flowering. It is velvety and thick in texture, and has an earthy, molasses, herbal taste. It is very complex and works beautifully with rich creamy cheeses like a brie, or harder aged cheeses.
