This does not ruin the chocolate and it is perfectly fine. The Valrhona Ivoire is a lightly sweetened white chocolate made with real cocoa butter with delicate flavors of fresh milk and vanilla. A high-end french chocolate coverture, it is perfect for making bonbons, coatings, moldings, ganaches, decorations, chocolate fillings, glazes and mousse. It has a great balnce of sugar and milk and avery fine texture. Ingredients: 35% cocoa, 43% sugar, 21.5% milk, 41.1% fat.
