The hollow ground blade ensures a precision concave surface for maximum edge retention. It is made from surgical grade, T420 high carbon stainless steel that is hand sharpened creating a razor sharp edge. It has a 6-5/8 inch blade and measures 11 inches overall. The handle on the carving knife is comprised of a black stainless steel resin that can be washed in the dishwasher. Hand washing fine cutlery is recommended but this handle is dishwasher tolerant.
