Cool and crunchy, lettuce has been the shining star of salads for decades, while some adventurous cooks take greens in new directions by tossing a halved head of Romaine on the grill or folding arugula into pasta dishes.
How to store
Keep greens crisp by wrapping in a damp paper towel. Refrigerate in the produce drawer of your fridge and use within 2-5 days.
How to prep
- Rinse under cool, running water
- For maximum crispness, fill a bowl with ice water and let the greens stand in the water for 10 minutes
- Drain and pat dry or whirl in a salad spinner
Washed greens can be stored in the fridge for 2-5 days.
Chef's tip
When sautéing spinach, it's best to blanch first in a pot of boiling water for 30 seconds. Drain, cool and squeeze excess moisture from the spinach. That step allows the spinach to better absorb the flavors of the ingredients in the sauté or stir-fry.
